Don't Blame Cholesterol

The Truth About Cholesterol

For decades we were fed the wrong information about animal fat - cholesterol in particular, and the effect on of our hearts, and waistlines. To be healthy, we were taught to fear bacon, and worship plant-based fats (aka vegetable/seed oils).
NOTHING COULD BE FURTHER FROM THE TRUTH!
FACTS ABOUT CHOLESTEROL
Every cell membrane is our body is composed of cholesterol.
All of our sex hormones are made from cholesterol.
If we don’t eat cholesterol, our bodies will make it.
Cholesterol does not CAUSE clogging of the arteries (read on to learn what does).
Eating animal fat does not make you fat - more on this to come.
FACTS ABOUT VEGETABLE/SEED OILS
All seeds contain substances that cause INFLAMMATION.
Vegetable/seed oils cause inflammation - inflammation is the starting point for all the common disease processes.
Clogging of the arteries begins as an inflammatory reaction on the inner surface of the arteries - most often due to eating the wrong foods.
The cholesterol we have as a normal component of our blood sticks to inflamed arteries.
For decades, the fact that cholesterol is found in clogged arteries led medical authorities to start a false war on animal fats - telling us to use vegetable/seed oils instead. This has actually created an epidemic of inflammation-driven diseases. We now know better.
We now know that cholesterol is not the culprit in heart disease. Inflammation is. We also know that eating animal fat does not make us fat. Eating starchy, high sugar content plant-based foods like grain (wheat/corn/rice, etc.), white potatoes, and refined sugar are the real enemies when it comes to weight gain.
What Should We Do?
GET RID OF THESE
margarine (made from seed oil)
canola oil, corn oil, soy bean oil, peanut oil, safflower oil - all vegetable/seed based oils
olive oil. This is a tough one, given all the alleged benefits, however it is hard to imagine that the substances in the olive seeds don’t find their way into the oils during the manufacturing process. Their are better substitutes (read on).
USE THESE
Lard/beef tallow (now available in places like Publix)
Butter
Ghee (even better than butter)
Duck fat (also available at Publix)
EXCEPTIONS

GOOD VEGETABLE OILS? Avocado oil is a good substitute for olive oil. Made entirely from the flesh of the avocado, there is no seed/pit substances in it. Coconut oil is another exception because of it’s unique chemical structure and low likelihood of being inflammatory.
The Bigger Picture

Animal fats/cholesterol are not the problem. Eggs, bacon, beef are not our dietary enemies. Sugar, starch, grain - these are the ones to avoid. In future newsletters we will build on this idea. For now, begin educating yourself about the Paleo dietary lifestyle. We need to try and eat more closely to the way our earliest ancestors did. Google and learn. I’ll be here to help. We need to start a war on inflammation - not cholesterol. Doing so may save your life.
